Back in the 1980s and 1990s, and spear­hea­ded mostly by Spain, a pro­cess of chan­ge and evo­lu­tion of everyt­hing lin­ked to food got un­der way. On one hand, a free­dom cuisine pops up, led by Fe­rran Adrià. In the sa­me breath, a glo­bal vi­sion re­la­ted to food and a new co­oking, coupled with new gas­tro­nomy, is es­ta­blis­hed, one that has to be healthy, friendly, sus­tai­na­ble and plea­sing.
