Make six thin rock­melon strips 2cm wide by 12cm long us­ing a peeler, then weave them onto cock­tail skew­ers. For fresh­ness, pop a large halved peach into a Vi­ta­mix just be­fore serv­ing and puree un­til fine. Add two tea­spoons of puree to each glass with a rock­melon cock­tail skewer, then top slowly with Prosecco.
