Eggs are a great source of pro­tein and can be served as a break­fast dish or as an any­time high pro­tein low carb meal when you want some­thing quick and easy. Try our de­li­cious egg pock­ets for a nu­tri­ent packed low carb meal.

2 Tbsp-Shred­ded Part-Skim Moz­zarella Cheese 4 Egg Whites 1 Whole Egg You can add a va­ri­ety of your fa­vorite vegetables. Ex­am­ple: 1/4 C. Sliced Mush­rooms 2 tbsp. Chopped Onions


Scram­ble Egg Whites and Whole Egg in bowl. Chop vegetables, spray sauté pan, and toss in vegetables, sauté on med-hi un­til slightly ten­der. Set aside in sep­a­rate bowl.

Spray sauté pan again, and pour in eggs, sea­son with salt and pep­per...let cook for 10 min on medium head, un­til mostly cooked, add vegetables and cheese on one side of the “omelet” care­fully fold and flip. Care­fully fold the half into another half, mak­ing a tri­an­gle. Pack into foil, for an on-the-go break­fast.
