Mornington Peninsula distillery Bass & Flinders creates a range of gins including the cherry- and raspberry-infused Cerise Gin, which Melbourne provedore Victoria Mill uses to create this playful cocktail. “[It] shines through with Turkish delight undertones,” says owner Jack McEwan. “Adding egg whites gives you a fluffy foam on top like a lovely pavlova.”
