No na­tion has mas­tered the art of slow-cook­ing bet­ter than China. Sim­mered stews, tra­di­tion­ally cooked in clay pots, trans­form even tough and cheap cuts into some­thing de­li­ciously ten­der. To update the orig­i­nal Good Food recipe, I’ve added a few flavour boost­ers and au­bergine, which takes on a new char­ac­ter when cooked like this.
