It was in­vented by flam­boy­antly mous­ta­chioed restau­ra­teur Al­fredo di Le­lio in Rome in 1908. Fame rapidly spread, and the restau­rant be­came a mag­net for roy­als and celebri­ties. Two restau­rants now claim to be the au­then­tic Al­fredo – Al­fredo alla Scrofa and Il Vero Al­fredo (‘The Gen­uine Al­fredo’). Film buffs should head to the lat­ter, in Pi­azza Au­gusto Im­per­a­tore, where the walls are lined with pho­tos of John Wayne, Frank Si­na­tra, Or­son Welles, Gin­ger Rogers and El­iz­a­beth Tay­lor (and count­less oth­ers) eat­ing the fa­mous dish.
