SERVES 4 PREP 10 mins COOK 15 mins EASY V Bring 500ml whole milk to the boil in a saucepan then take it off the heat. In a large bowl, beat together 4 egg yolks, 75g sugar, 3 tbsp cornflour and the seeds from 1 vanilla pod. Slowly pour the hot milk onto the egg yolk mixture, whisking all the time. Pour everything back into the saucepan and cook for 8-10 mins, stirring all the time until the mixture is thick and smooth.
