Should steak be cooked at room temp?

Hav­ing cooked hun­dreds of steaks in the test kitchen, we can firmly de­bunk this kitchen myth. Firstly, bring­ing a thick steak out the fridge an hour be­fore cook­ing makes very lit­tle difference to the in­ter­nal tem­per­a­ture of the meat and when you cook two steaks (one fridge-cold and one left at room tem­per­a­ture for an hour) there is no no­tice­able difference on eat­ing. If you want a sim­ple way to up your steak game, try sea­son­ing it 30 mins be­fore cook­ing.
