Sausages with herby white beans

SERVES 3 PREP 10 mins COOK 25 mins EASY

Roast 8 sausages at 200C/180C fan/gas 6 un­til golden brown, around 20-25 mins. Mean­while, fry 1 chopped onion in 1 tbsp olive oil with some sea­son­ing for around 5 mins. Add 4-5 an­chovies and 1 tbsp of ca­pers, then tip in 2 x 400ml cans of can­nellini beans, drained, and 400ml wa­ter. Add a glass of white wine and 3 tbsp pesto and cook for 10 mins. Sea­son, squeeze over some lemon and serve with the sausages.
