Sausage, gherkin & pick­led onion toad-in-the-hole

Tip 6 sausages into a small roast­ing tin with 2 red onions, cut into wedges, and some sea­son­ing. Driz­zle with olive oil and roast at 220C/200C fan/gas 7 for 10-15 mins, shak­ing half­way. Mean­while, whisk 140g plain flour with 3 eggs, 300ml milk, 1 tsp English mus­tard and some sea­son­ing. Pour over the sausage-onion mix­ture. Scat­ter a hand­ful of drained gherkins and mini pick­led onions into the mix­ture and bake for 25 mins.
