‘I made this for the Aus­tralian Foot­ball League fi­nal in Mel­bourne (which is a big deal – the day of the fi­nal is a pub­lic holiday). I wanted some­thing full of flavour, easy to eat and that can be made in batches. I knew about the flavour­ing and spices of South Amer­ica, so I mixed them to­gether and wrapped it in flaky, but­tery pas­try. And I think they’re win­ners!’
