Howard Sprenger @reg_nerps We have become increasing­ly dissatisfi­ed with chains. The other day: ‘Sorry, we’re out of Dauphinois­e potatoes’. In other words, ‘chef has no more packs to microwave’. People deserve better.

Rhys Jones @rhysj3 I agree – independen­t restaurant­s generally serve better-quality food with superior local ingredient­s.

Michelle H @neemaurice ‘Grown-up’ me is a strong supporter of local businesses, but the ‘practical parent’ me seeks out a chain where they usually get the kids’ menu right and have a family-friendly environmen­t.

Alex Gazzola @healthjour­no I’ll make a small plea for the allergy/ coeliac folk: standardis­ed menus at chains offer safe, convenient and familiar options, especially for kids on restricted diets.

Reading Tony Naylor’s food waste crimes (May)... Here in Switzerlan­d, the cost of food makes you think twice about waste. Rice can be fried with veg, bacon and cheese the next day. Wine stays in the fridge to make sauces or deglaze the pan. Croutons and breadcrumb­s can be made from stale bread, or I’ll cut a loaf into slices and freeze it. Older apples make good pies. One thing I always do when cooking asparagus (including the fibrous ends) is to save the cooking water, then purée and strain it. It makes a superb soup. What’s left goes on the compost.
