Adding an egg and a shot of chilli makes this an easy Fri­day night treat.

pack of 4 breaded chicken escalopes 4 eggs

oil, for fry­ing 1 bag wa­ter­cress driz­zle of chilli oil

Cook the escalopes fol­low­ing pack in­struc­tions. When they are nearly done, fry the eggs in a lit­tle oil in a large fry­ing pan. Serve the chicken on a bed of wa­ter­cress, topped with a fried egg and a driz­zle of chilli oil.
