Por­ridge with quick berry com­pote, figs & pis­ta­chios

SERVES 2 PREP 5 mins COOK 5 mins EASY V

150g por­ridge oats 100ml milk 120g frozen berries 1/2 orange, zested and juiced 1 fig, sliced 1 tbsp pis­ta­chios, toasted and chopped

1 Put the oats, milk and 450ml wa­ter in a pan with a pinch of salt. Cook for about 5 mins un­til thick and creamy. Mean­while, mi­crowave the berries, orange juice and zest for 2-3 mins.

2 Di­vide the por­ridge be­tween bowls and top each with the berry com­pote, fig and pis­ta­chios.
