Dishes from London’s Cora Pearl you can make at home
Cynics might slam a restaurant for creating dishes for social media appeal, but when they’re as good as Cora Pearl’s cheese and ham toastie (with homemade pickle), we’re grateful to Instagram for drawing it to our attention. The menu at this small, buzzing Covent Garden restaurant is reassuringly comforting: leek terrine, fish stew, pork and onions and a seasonal trifle for two to share. Everything sounds familiar – confit potatoes (aka domino potatoes) are listed simply as chips, modestly downplaying the kitchen’s skills.
We asked chef George Barson to create an October menu, simplifying some of the dishes to make them easy to create at home. Here, we’ve used a time-saving shortcut by buying sponge for the pear trifle – at Cora Pearl, expect it to be lovingly made from scratch with rapeseed oil. @georgebarsoncorapearl.co.uk
