Dishes from Lon­don’s Cora Pearl you can make at home

Cyn­ics might slam a restau­rant for cre­at­ing dishes for so­cial me­dia ap­peal, but when they’re as good as Cora Pearl’s cheese and ham toastie (with home­made pickle), we’re grate­ful to In­sta­gram for drawing it to our at­ten­tion. The menu at this small, buzzing Covent Gar­den restau­rant is re­as­sur­ingly com­fort­ing: leek ter­rine, fish stew, pork and onions and a sea­sonal tri­fle for two to share. Ev­ery­thing sounds fa­mil­iar – con­fit pota­toes (aka domino pota­toes) are listed sim­ply as chips, mod­estly down­play­ing the kitchen’s skills.

We asked chef Ge­orge Bar­son to cre­ate an Oc­to­ber menu, sim­pli­fy­ing some of the dishes to make them easy to cre­ate at home. Here, we’ve used a time-sav­ing short­cut by buy­ing sponge for the pear tri­fle – at Cora Pearl, ex­pect it to be lov­ingly made from scratch with rape­seed oil. @george­bar­son­co­ra­pearl.co.uk
