Pear, ap­ple & rose punch

Pour 1 litre pear juice into a large pan. Add 1 vanilla pod, 1 tbsp golden caster sugar, 4 car­damom pods and a few slices root gin­ger, then bring to a sim­mer. Leave to cool com­pletely, then strain into a punch bowl or jug. Add 25ml raw ap­ple cider vine­gar, 1/2 tsp rose wa­ter and 250ml sparkling wa­ter.
