The Roast Porchetta for the Glen­morangie din­ner (p210) was pretty de­li­cious, quite deca­dent and great for win­ter. Where is home for you? The North­ern Rivers re­gion, near the coast of By­ron Bay. I love the cli­mate, di­ver­sity of peo­ple, fresh pro­duce and laid-back life­style. Not that my life­style is laid-back! But the peo­ple de nitely are. Your favourite lo­cal haunts? The Belle Gen­eral Cafe in Bal­lina, The Farm By­ron Bay and the Ban­ga­low mar­ket, as far as fresh pro­duce goes. Your ul­ti­mate travel es­cape? The Tran­sSiberian Ex­press: it’s de nitely on my bucket list to do one day. What de­sign item are you cov­et­ing right now? I re­cently bought my rst house so am slowly ac­cu­mu­lat­ing pieces I re­ally love. I’m des­per­ate to get a beau­ti­ful teak ta­ble I’ve spot­ted lo­cally. On your read­ing list? Yo­tam Ot­tolenghi’s Nopi. I love his use of flavours and how he high­lights fresh pro­duce. Also, I’m read­ing a lot of university texts be­cause I am com­plet­ing my Masters in Heal­ing Nu­tri­tion.
