The Roast Porchetta for the Glenmorangie dinner (p210) was pretty delicious, quite decadent and great for winter. Where is home for you? The Northern Rivers region, near the coast of Byron Bay. I love the climate, diversity of people, fresh produce and laid-back lifestyle. Not that my lifestyle is laid-back! But the people de nitely are. Your favourite local haunts? The Belle General Cafe in Ballina, The Farm Byron Bay and the Bangalow market, as far as fresh produce goes. Your ultimate travel escape? The TransSiberian Express: it’s de nitely on my bucket list to do one day. What design item are you coveting right now? I recently bought my rst house so am slowly accumulating pieces I really love. I’m desperate to get a beautiful teak table I’ve spotted locally. On your reading list? Yotam Ottolenghi’s Nopi. I love his use of flavours and how he highlights fresh produce. Also, I’m reading a lot of university texts because I am completing my Masters in Healing Nutrition.
