SALMON POTATO

Put a large non-stick fry­ing pan over medium heat.

Add 1 Tbsp olive oil and pan-fry 4 bone­less salmon fil­lets, skin-side down, for

4 min­utes or un­til skin is crisp and fish is cooked to half­way up fil­lets. Turn fil­lets over and cook for a fur­ther 1 minute. Add 20g but­ter and cook for a fur­ther 30 sec­onds or un­til fish is just cooked through. Mean­while, cook 2 x 400g Wool­worths Sim­ply Steam Potato With But­ter And Herb as per packet in­struc­tions. Trans­fer to a large bowl, add ¹⁄³ cup semidried toma­toes and 2 Tbsp basil pesto. Toss well. Serve salmon on a bed of pota­toes, with 120g packet baby spinach. Sea­son with pep­per, gar­nish with basil and serve with lemon wedges and ex­tra pesto on the side. Serves 4.
