Put a large non-stick frying pan over medium heat.
Add 1 Tbsp olive oil and pan-fry 4 boneless salmon fillets, skin-side down, for
4 minutes or until skin is crisp and fish is cooked to halfway up fillets. Turn fillets over and cook for a further 1 minute. Add 20g butter and cook for a further 30 seconds or until fish is just cooked through. Meanwhile, cook 2 x 400g Woolworths Simply Steam Potato With Butter And Herb as per packet instructions. Transfer to a large bowl, add ¹⁄³ cup semidried tomatoes and 2 Tbsp basil pesto. Toss well. Serve salmon on a bed of potatoes, with 120g packet baby spinach. Season with pepper, garnish with basil and serve with lemon wedges and extra pesto on the side. Serves 4.
