Pumpkin and apple salad
Preparation: 10 minutes Cooking: 15 minutes Serves: 4 Ingredients 1 butternut pumpkin, peeled and cubed 500g rump steak 2 Granny Smith apples, sliced 1 tbsp freshly chopped coriander 1 cup snowpeas, trimmed
1⁄2 cup cashews, toasted
1 tsp curry paste 1 cup coconut milk
1⁄2 cup lemon juice
Steam pumpkin cubes until tender. Grill steak for about 4 minutes each side or until at desired stage. Slice diagonally. Combine pumpkin, apples, coriander, snow peas and sliced steak in a serving bowl. Place dressing ingredients in a separate bowl. Mix well. Pour dressing over. Toss well to combine. Serve with cashews sprinkled over top and fresh crusty bread.
