Pump­kin and ap­ple salad

Prepa­ra­tion: 10 min­utes Cook­ing: 15 min­utes Serves: 4 In­gre­di­ents 1 but­ter­nut pump­kin, peeled and cubed 500g rump steak 2 Granny Smith ap­ples, sliced 1 tbsp freshly chopped co­rian­der 1 cup snow­peas, trimmed

1⁄2 cup cashews, toasted


1 tsp curry paste 1 cup co­conut milk

1⁄2 cup lemon juice


Steam pump­kin cubes un­til ten­der. Grill steak for about 4 min­utes each side or un­til at de­sired stage. Slice di­ag­o­nally. Com­bine pump­kin, ap­ples, co­rian­der, snow peas and sliced steak in a serv­ing bowl. Place dress­ing in­gre­di­ents in a sep­a­rate bowl. Mix well. Pour dress­ing over. Toss well to com­bine. Serve with cashews sprin­kled over top and fresh crusty bread.
