Carrot and ginger loaf
Preparation: 10 minutes Cooking: 1 hour Serves: 6 Ingredients: 1 cup self-raising flour 1 tsp bicarbonate of soda 1 tsp allspice 1 cup brown sugar 1 cup finely grated carrot 1 pear, peeled, cored, diced finely ½ cup raisins, chopped ½ cup finely chopped glace ginger ¼ cup oil ¼ cup low-fat milk 2 eggs, lightly beaten 1 tbsp pumpkin seeds Method: Sift flour, bicarbonate of soda and allspice into a bowl. Stir in sugar, carrot, pear, raisins and ginger. Stir in oil, milk and eggs. Beat gently to mix ingredients thoroughly. Pour into a lightly oiled loaf pan. Sprinkle with pumpkin seeds. Bake at 170C for about 1 hour. Stand 5 minutes before turning onto wire rack to cool.
