SRIRACHA NOODLES WITH SPRING ONION CHICKEN
2 tsp smoked paprika
1 tsp ground tumeric
Salt and pepper
12 chicken drumsticks, skin removed 6 spring onions, cut into batons
1 cup chicken stock
Sriracha chilli sauce
500g ramen noodles
Add the paprika, turmeric, salt and pepper to a plastic bag and mix well. Add the drumsticks and mix with the spices until evenly coated.
Set aside for an hour to marinate.
In the meantime, light your barbecue and cook the chicken till done. Saute the spring onions in a little oil on the grill of the barbecue.
Add the stock and a good splash of Sriracha sauce to a pot and bring to a simmer. Add the noodles and warm through. Drain.
When the chicken is done, strip the meat from the bone and serve with the spring onions over the noodles. Drizzle with more chilli sauce to taste.
