SRIRACHA NOO­DLES WITH SPRING ONION CHICKEN

2 tsp smoked pa­prika

1 tsp ground tumeric

Salt and pep­per

12 chicken drum­sticks, skin re­moved 6 spring onions, cut into ba­tons

1 cup chicken stock

Sriracha chilli sauce

500g ra­men noo­dles

Add the pa­prika, turmeric, salt and pep­per to a plas­tic bag and mix well. Add the drum­sticks and mix with the spices un­til evenly coated.

Set aside for an hour to mar­i­nate.

In the mean­time, light your bar­be­cue and cook the chicken till done. Saute the spring onions in a lit­tle oil on the grill of the bar­be­cue.

Add the stock and a good splash of Sriracha sauce to a pot and bring to a sim­mer. Add the noo­dles and warm through. Drain.

When the chicken is done, strip the meat from the bone and serve with the spring onions over the noo­dles. Driz­zle with more chilli sauce to taste.
