Sweet option to replace potatoes in meals
SWEET potato is a great alternative for those who love their tatties but cannot eat too much starch. Sweet potato can act as a substitute for potato in recipes such as shepherd’s pie, roasts or you can spray them with oil and bake them in a hot oven for a twist on traditional chips.
Sweet potato and bacon slice
INGREDIENTS: 1 sweet potato shredded; 1 zucchini shredded; 4 bacon rashers shredded; 1 onion shredded; 4 eggs; 1 cup self-raising flour; 1 cup cheese grated; 1 tbs garlic; 1 tbs chives; 1 tsp pepper *to taste
METHOD: Add all ingredients together and mix well. Place into a non-stick slice tray. Bake at 220C (180 fan forced) for 40–50 minutes.
NOTES: Serve with salad or sweet potato chips. Substitute other vegetables as desired.
