Sweet op­tion to re­place pota­toes in meals

SWEET potato is a great al­ter­na­tive for those who love their tat­ties but can­not eat too much starch. Sweet potato can act as a sub­sti­tute for potato in recipes such as shep­herd’s pie, roasts or you can spray them with oil and bake them in a hot oven for a twist on tra­di­tional chips.

Sweet potato and ba­con slice

IN­GRE­DI­ENTS: 1 sweet potato shred­ded; 1 zuc­chini shred­ded; 4 ba­con rash­ers shred­ded; 1 onion shred­ded; 4 eggs; 1 cup self-rais­ing flour; 1 cup cheese grated; 1 tbs gar­lic; 1 tbs chives; 1 tsp pep­per *to taste

METHOD: Add all in­gre­di­ents to­gether and mix well. Place into a non-stick slice tray. Bake at 220C (180 fan forced) for 40–50 min­utes.

NOTES: Serve with salad or sweet potato chips. Sub­sti­tute other veg­eta­bles as de­sired.
