Give these spicy chicken drum­sticks a whirl for din­ner

MIX up your week with these flavour­some chicken drum­sticks in­fused with Mid­dle East­ern spices and served with a spiced tomato salad.

Su­mac chicken drum­sticks with spiced tomato salad

Serves 4 IN­GRE­DI­ENTS: ◗ 1 tbs ground cumin ◗ 1 tbs su­mac ◗ 1⁄ tsp 2 ground car­damom ◗ 1 tsp ground turmeric ◗ 2 gar­lic cloves, crushed ◗ 2 tbs ex­tra virgin olive oil ◗ 2 tbs fresh flat-leaf pars­ley leaves, chopped ◗ 8 chicken drum­sticks ◗ 1⁄ cup hum­mus, to serve ◗ 4 Le­banese bread rounds, to 2 serve. Spiced tomato salad: ◗ 1 cup fresh flat-leaf pars­ley leaves ◗ 1⁄ cup fresh co­rian­der leaves ◗ 5 vine-ripened 2 to­ma­toes, chopped ◗ 1⁄ red onion, thinly sliced ◗ 1 tsp 2 ground cumin ◗ 2 tbs red wine vine­gar ◗ 2 tbs ex­tra virgin olive oil METHOD: Com­bine cumin, su­mac, car­damom, turmeric, gar­lic, oil and pars­ley in a large bowl. Add chicken. Turn to coat. Cover. Re­frig­er­ate for 20 min­utes. Pre­heat oven to 180 de­grees or 160 fan-forced. Line a large bak­ing tray with bak­ing pa­per. Place chicken on pre­pared tray. Bake for 40 min­utes or un­til chicken is golden and cooked through. Mean­while, make spiced tomato salad: place pars­ley, co­rian­der, tomato, onion, cumin, vine­gar and oil in a bowl. Toss well to com­bine. Place hum­mus in a mi­crowave-safe dish. Mi­crowave on high (100%) for 40 sec­onds or un­til just warmed through. Serve chicken with tomato salad, bread and hum­mus.
