Marsh­mal­low de­light

DO YOU have the yawns at 3pm? Or per­haps you want to slip a sweet treat into your kids’ lunch boxes or your busy other half’s? Then this slice might be what you are look­ing for. Not your ev­ery­day slice, but it’s nice for a mid­night snack.

I had some left­over marsh­mal­lows from the school hol­i­days that I wanted to use up. You can eat this slice straight out of the freezer.

Line a slice tray with bak­ing pa­per and lightly grease.

Now in a large bowl, crush a packet of sweet plain bis­cuits. I ac­tu­ally used those 100s and 1000s pink iced bis­cuits, and they didn’t make it too sweet. Once crushed, add in one cup of finely chopped marsh­mal­lows, one cup of flaked co­conut and one cup of choco­late chips (white or dark – or both.) In another mi­crowave-safe bowl, com­bine one tin of con­densed milk, 100g of but­ter, one tea­spoon of co­coa pow­der, one tea­spoon of vanilla and zap for one minute or un­til but­ter has melted. Stir re­ally well un­til com­bined. Now add to the dry mix­ture and mix well again. Spread out on a tray and re­frig­er­ate un­til hard. Melt some choco­late to driz­zle on top of you want to.

You could eas­ily turn this into a rocky road slice just by adding a cup of nuts and some cut-up Turk­ish de­lights.
