The Greens eight-hectare prop­erty helps feed the fam­ily, but their com­mer­cial crop doesn’t come from the small farm. “We ended up get­ting back into bee­keep­ing,” says Simon. “It doesn’t mat­ter how many hives we buy, we can’t keep up.” Simon grew up around bees. His dad, Sonny, was a bee­keeper, and now fa­ther and son work as a team, mov­ing their 180 hives around the coun­try. In ad­di­tion to honey pro­duc­tion, there’s an in­creased de­mand in the state’s south-west for pol­li­na­tion ser­vices, so Simon may find him­self among the av­o­ca­does, stone fruit and canola crops. “The
