“Start with chilled cooked pasta, and this salad can come together in under five minutes,” suggests chef Biju Thomas, fellow author of The Feed Zone Cookbook. “The key component is carbs but adding cooked meat can easily add more protein to that, and the cheese and nuts.”
Serves 2 2 tbsp olive oil 30g chopped walnuts 2 tbsp chopped fresh parsley 1 tbsp coarse-ground mustard 1 tbsp crumbled blue cheese 200g pasta 85g mixed baby greens Fresh lemon juice
Time to make: 12 minutes Cook the pasta as per its instructions. In the meantime combine the olive oil, walnuts, parsley, mustard and blue cheese in a large bowl. Mix in the cooked pasta. Serve the greens with the pasta on top - add lemon juice and salt to taste.
