“Start with chilled cooked pasta, and this salad can come to­gether in un­der five min­utes,” sug­gests chef Biju Thomas, fel­low au­thor of The Feed Zone Cook­book. “The key com­po­nent is carbs but adding cooked meat can eas­ily add more pro­tein to that, and the cheese and nuts.”


Serves 2 2 tbsp olive oil 30g chopped wal­nuts 2 tbsp chopped fresh pars­ley 1 tbsp coarse-ground mus­tard 1 tbsp crum­bled blue cheese 200g pasta 85g mixed baby greens Fresh lemon juice


Time to make: 12 min­utes Cook the pasta as per its in­struc­tions. In the mean­time com­bine the olive oil, wal­nuts, pars­ley, mus­tard and blue cheese in a large bowl. Mix in the cooked pasta. Serve the greens with the pasta on top - add lemon juice and salt to taste.
