BEET­ROOT SOUP

IN­GRE­DI­ENTS

Serves 6 • 4 medium beet­roots

(about ap­ple size), diced • 500g toma­toes • 1 clove gar­lic • 1 medium onion • 2 tbsp olive oil • 500ml stock (beef is best, but chicken or veg­etable will do) • Salt and freshly ground black

pep­per to sea­son • 1 shot of Beet It per serv­ing (to reach the re­quired amount of ni­trates)

METHOD

1 Slice the toma­toes in half. Sea­son with salt and pep­per, driz­zle with oil.

2 Grill the toma­toes un­til soft. Chop the onion, then fry in a pan un­til golden.

3 Add the stock and diced beet­roots. Bring to the boil, then sim­mer for 10 min­utes.

4 Add ev­ery­thing to a blender and blend un­til smooth. Serve in a bowl with a Beet It shot on the side.
