Serves 6 • 4 medium beetroots
(about apple size), diced • 500g tomatoes • 1 clove garlic • 1 medium onion • 2 tbsp olive oil • 500ml stock (beef is best, but chicken or vegetable will do) • Salt and freshly ground black
pepper to season • 1 shot of Beet It per serving (to reach the required amount of nitrates)
1 Slice the tomatoes in half. Season with salt and pepper, drizzle with oil.
2 Grill the tomatoes until soft. Chop the onion, then fry in a pan until golden.
3 Add the stock and diced beetroots. Bring to the boil, then simmer for 10 minutes.
4 Add everything to a blender and blend until smooth. Serve in a bowl with a Beet It shot on the side.
