Easy mar­i­nated beef fil­let

2 tsp olive oil

2 tsp bal­samic vine­gar

2 tsp soy sauce, salt re­duced

1⁄ tsp Di­jon mus­tard


1 gar­lic clove, crushed Lean beef fil­let, 200g

1 cup green beans, chopped

1⁄ medium car­rot, chopped

2 3 broc­col­ini stalks


Com­bine olive oil, bal­samic vine­gar, soy sauce, mus­tard and gar­lic in a small bowl or jar. Coat beef fil­let in mari­nade and leave in the fridge for 10–15 min­utes.

Heat a non-stick fry­ing pan over a medium-high heat. Cook beef for about three to four min­utes each side or to your lik­ing.

Mean­while, steam car­rot, green beans and broc­col­ini for four to five min­utes. Serve beef fil­let and mixed veg­eta­bles for a sim­ple yet tasty din­ner.
