Easy marinated beef fillet
2 tsp olive oil
2 tsp balsamic vinegar
2 tsp soy sauce, salt reduced
1⁄ tsp Dijon mustard
1 garlic clove, crushed Lean beef fillet, 200g
1 cup green beans, chopped
1⁄ medium carrot, chopped
2 3 broccolini stalks
Combine olive oil, balsamic vinegar, soy sauce, mustard and garlic in a small bowl or jar. Coat beef fillet in marinade and leave in the fridge for 10–15 minutes.
Heat a non-stick frying pan over a medium-high heat. Cook beef for about three to four minutes each side or to your liking.
Meanwhile, steam carrot, green beans and broccolini for four to five minutes. Serve beef fillet and mixed vegetables for a simple yet tasty dinner.
