The Gantry, the sleek restaurant inside the waterfront Pier One Sydney Harbour hotel, could easily coast by on looks alone, but it doesn’t. Chef Joel Bickford has a magisteria­l way with food, and for the month of July he’s invited an all-star team to join him at the pass. The ‘Friends of The Gantry’ menu is a five-course degustatio­n with contributi­ons from James Viles (Biota, Bowral), Troy Rhoades-Brown (Muse, Hunter Valley), Hanna Leinonen and Aaron Ward (both sous chefs at Sixpenny, Sydney). “All these chefs have influenced or inspired me in one way or another,” says Bickford. The $99 spread, which spans smoked Newcastle mackerel, Murray cod and wild boar, can be ordered at lunch or dinner. A portion of the proceeds will go to OzHarvest.
