One of the more pre­mium butcher cuts, lamb backstrap has a milder flavour than a leg of lamb. Backstrap is lean and meaty, and gen­er­ally free from fat and gris­tle, mak­ing it a health­ier op­tion for lamb lovers. Be­cause of that low fat con­tent, it’s best cooked quickly over a de­cent heat.
