100g frozen blue­ber­ries (Trewhella Farm

‘Brigitte’ Snap Frozen Blue­ber­ries) 1 cup crushed ice 1/4 cup (40g) frozen fin­ger lime pearls (The Lime Caviar Com­pany) or 4 fin­ger limes, pearls re­moved 3/4 cup (180ml) gin 3 cups (750ml) tonic wa­ter Ed­i­ble flow­ers (Pretty Pro­duce), to serve

Sprin­kle blue­ber­ries into an ice-cube tray. Top with wa­ter and freeze.

Place ice, blue­berry ice cubes and fin­ger lime pearls in a jug. Add gin and tonic, and stir to com­bine. Top with flow­ers and serve.
