Or­der from the il­lus­trated menu that brims with rum and rye con­coc­tions, and in­ven­tive drinks like a ‘pineap­ple cob­bler’. Con­cealed in an al­ley off Ge­orge Street, Bur­row Bar (De Mestre Pl; bur­row­bar.com.au), is a low-key base­ment space with sand­stone walls, bar­rel-aged cock­tails and craft beers. Pre­fer wa­ter views? Ze­phyr (161 Sus­sex St; zephyr­barsyd­ney.com) is perched atop the Hyatt Re­gency, over­look­ing Dar­ling Har­bour, of­fer­ing ad­ven­tur­ous drinks like peach and thyme spritzes, pink grape­fruit mar­ti­nis and foam­ing nitro espres­sos. Hand­crafted so­das like bush tonic and wat­tle form the ba­sis of the imag­i­na­tive re­fresh­ments at PS40 (2/40 King St; ps-soda.com), while its black and white in­te­ri­ors recall an Et­tore Sottsass ves­sel. Mean­while, Beta Bar (238 Castlereagh St, betabarsyd­ney.com.au) is an el­e­gant lounge with lus­cious li­ba­tions, Greek-style mezze snacks and re­mark­able glass­ware.
