The Mel­bourne sub­urb of Kew is not known for its culi­nary noodling, but the menu at new cafe Hia­tus spans pro­gres­sive dishes such as smoked mush­room broth, cau­li­flower steak, and pump­kin hot cakes with nec­tarines (above), all cre­ated in a low-waste kitchen. It’s brunch but not as you know it.
