YOU’LL NEED • 2 avocados • 1 tomato, finely chopped • ½ red onion, finely chopped • ½ lemon • Salt and pepper, to taste • Corn chips TO MAKE 1. Mash the avocados with a potato masher or the back of a fork until they’re mushy but still a bit chunky. 2. Add the tomato and red onion. 3. Squeeze the juice from the lemon and mix well. 4. Add a touch of salt and pepper. 5. Serve with a big bowl of corn chips.
