CHRIST­MAS TREE CUP­CAKES

YOU’LL NEED:

1 cup un­salted but­ter, cut into cubes and soft­ened

2 cups caster sugar

5 eggs

1½ cups self-rais­ing flour

1½ cups plain flour

1 cup milk

1 tea­spoon vanilla ex­tract

VANILLA FROST­ING

1 cup un­salted but­ter, cut into cubes and soft­ened

6 cups ic­ing sugar ½ cup milk

2 tea­spoons vanilla ex­tract

Green food colour­ing

Choco­late writ­ing pen

Mini M&M’S

TO MAKE:

1 Pre­heat oven to 180ºc and line muf­fin tins with cup­cake lin­ers.

2 In a large bowl, on the medium speed of an elec­tric mixer, cream the but­ter un­til smooth. Grad­u­ally add sugar. Add eggs, one at a time, beat­ing well af­ter each ad­di­tion. Add flours, milk and vanilla, then beat un­til all in­gre­di­ents are well com­bined.

3 Spoon the bat­ter into the cup­cake lin­ers, filling them about ¾ full. Bake for 25 mins, then set aside to cool.

4 To make frost­ing, place but­ter, 4 cups of the sugar, milk and vanilla into a mix­ing bowl. On the medium speed of an elec­tric mixer, beat un­til smooth. Add the rest of the sugar and beat well, then add a few drops of green food colour­ing and mix un­til com­bined. You can add more if it’s not green enough.

5 Us­ing a pip­ing bag, pipe the frost­ing on top of the cup­cakes, then draw a spi­ral line around it with the choco­late writ­ing pen and af­fix mini M&M’S to look like lights.
