SERVES 8 TAKES 45 MINS PLUS FREEZING TIME
8 flat chocolate biscuits (we used Cadbury Breakaways)
200g cream cheese
½ tsp vanilla extract
2½ cups icing sugar
8 large strawberries
¼ cup finely shredded coconut
8 small strawberries
16 mini chocolate chips
1 Place biscuits on a large platter in a single layer.
2 Combine cream cheese, vanilla and sugar in a medium bowl and mix to create a thick frosting.
3 Place frosting in a piping bag and refrigerate for 20 mins.
4 Pipe beard shape with frosting at the centre of hulled large strawberries. Press strawberries into coconut, beard-side down, to stick the coconut to the beard. Attach hulled end of the strawberry to the biscuit with a small amount of frosting.
5 Using a small amount of frosting, stick two blueberries to the base of each large strawberry to make Santa’s boots.
6 Pipe frosting around small strawberry tips to create heads and to top off Santa’s hat. Use mini chocolate chips for his eyes.
