STRAW­BERRY SAN­TAS

SERVES 8 TAKES 45 MINS PLUS FREEZ­ING TIME

YOU’LL NEED:

8 flat choco­late bis­cuits (we used Cad­bury Break­aways)

200g cream cheese

½ tsp vanilla ex­tract

2½ cups ic­ing sugar

8 large straw­ber­ries

¼ cup finely shred­ded co­conut

16 blue­ber­ries

8 small straw­ber­ries

16 mini choco­late chips

TO MAKE:

1 Place bis­cuits on a large plat­ter in a sin­gle layer.

2 Com­bine cream cheese, vanilla and sugar in a medium bowl and mix to cre­ate a thick frost­ing.

3 Place frost­ing in a pip­ing bag and re­frig­er­ate for 20 mins.

4 Pipe beard shape with frost­ing at the cen­tre of hulled large straw­ber­ries. Press straw­ber­ries into co­conut, beard-side down, to stick the co­conut to the beard. At­tach hulled end of the straw­berry to the bis­cuit with a small amount of frost­ing.

5 Us­ing a small amount of frost­ing, stick two blue­ber­ries to the base of each large straw­berry to make Santa’s boots.

6 Pipe frost­ing around small straw­berry tips to cre­ate heads and to top off Santa’s hat. Use mini choco­late chips for his eyes.
