ginger and papaya smoothie
1 small papaya (about 700g), peeled and chopped
1 teaspoon finely grated ginger
3 cups (750ml) coconut water
2 teaspoons lime juice
1 teaspoon finely grated lime rind, plus extra to serve 1 tablespoon honey
1 cup ice cubes, plus extra to serve
Place the papaya, ginger, coconut water, lime juice, lime rind, honey and ice in a blender and blend until smooth. Divide between glasses and top with extra ice and lime rind to serve.
