ginger and pa­paya smoothie

1 small pa­paya (about 700g), peeled and chopped

1 tea­spoon finely grated ginger

3 cups (750ml) co­conut water

2 tea­spoons lime juice

1 tea­spoon finely grated lime rind, plus ex­tra to serve 1 ta­ble­spoon honey

1 cup ice cubes, plus ex­tra to serve

Place the pa­paya, ginger, co­conut water, lime juice, lime rind, honey and ice in a blender and blend un­til smooth. Di­vide be­tween glasses and top with ex­tra ice and lime rind to serve.
