After a very busy few months at the end of last year, I feel so happy to have had a quiet and restorative couple of weeks at home over the summer break. Now I’m refreshed and ready to jump into the new year. The key for me is a daily routine I know I can sustain, beginning with my early morning run and green smoothie, healthy snacks and a light lunch during the day. Then, my favourite way to finish the day is with a lean and delicious dinner with my boys. Having these habits in place (with the occasional sneaky treat, of course!) means that when life has other plans – like dinners out and trips away – it’s easy for me to get back on track the next day. This new issue of Fresh + Light is full of amazing recipes that means eating well is easier than ever. It’s full of flavour some ideas that have already become my everyday favourites. I’m loving our weeknight meals, which take advantage of all the outstanding summer produce available right now – starting with fresh, crisp rainbow salads (page 70). If you’re a fan of classic fish cakes, check out our updated versions on page 80. Each one uses fresh fillets and nourishing additions to create tasty crowd-pleasing dinners. And these hot days call for frosty treats, so we’ve taken over-the-top ice-cream sundaes (page 126) and sweet granitas (page 138), and made them better for you, but still completely luscious.
