Goji trail mix pro­tein bars

¾ cup (120g) al­monds

½ cup (100g) pepi­tas (pump­kin seeds), plus ex­tra for sprin­kling ½ cup (75g) sun­flower seeds, plus ex­tra for sprin­kling

14 fresh dates (280g), pit­ted

¼ cup (80g) al­mond spread

1 tea­spoon vanilla bean paste

¼ cup (25g) un­flavoured pro­tein pow­der+

½ cup (70g) goji berries, plus ex­tra for sprin­kling Line a lightly greased 20cm square tin with non-stick bak­ing pa­per. Place the al­monds, pepi­tas, sun­flower seeds, dates al­mond spread, vanilla and pro­tein pow­der in a food pro­ces­sor and process for 2–3 min­utes or un­til the mix­ture comes to­gether. Add the goji berries and pulse un­til well com­bined.

Press the mix­ture into the tin and sprin­kle gen­er­ously with the ex­tra pepi­tas, sun­flower seeds and goji berries. Re­frig­er­ate for 40 min­utes or un­til firm. Cut into 16 squares and serve. MAKES 16. + Look for pea or whey pro­tein pow­der in health food stores and the health food sec­tion of su­per­mar­kets.

Tip: You can store these bars in the re­frig­er­a­tor for up to 2 weeks.
