We are so lucky to live in an age where there is a wealth of information and insight into what we can eat to help us really thrive, but for me, no matter what the headlines say, it always comes back to the basics – fresh produce and wholefoods. While I am often inspired to try new things to see what makes me feel my best, it’s all about balance and eating a variety of nourishing foods (with a treat now and then, of course!). This beautiful new issue of Fresh + Light has everything I need to feel energised during the autumn months, whether I’m after breakfast on-the-go, an easy weeknight dinner or something special to impress. You can’t miss our recipes (including the amazing cover star) using one of my favourite hero ingredients, cauliflower (page 102). And our vegetable tarts (page 62) have become regulars at home – the wholemeal hot water pastry is so easy that I’ve taken to making two or three tarts for when friends come over. We’ve also explored ways of using extra virgin olive oil in every meal of the day, including a must-make cake (page 116). Speaking of dessert, the cooler weather means I’m turning the oven on, and our gluten-free cakes (page 128) and fruity cobblers (page 140) are satisfying all my sweet cravings. And, of course, there are snacks, treats, and more for those in-between moments. In a nutshell, this is food to nurture yourself and the people you love, and I hope you enjoy!
