1 cup (140g) roasted peanuts 2 cloves garlic 1 long red chilli, cut into thirds ¼ cup (60ml) vegetable oil 1 tablespoon tamarind paste 1 tablespoon kecap manis (sweet soy sauce) 2 teaspoons fish sauce 1 teaspoon white (granulated) sugar 1 cup (250ml) coconut milk
Place the peanuts in the Thermomix TM5 mixing bowl and chop for 10 seconds/speed 5. Place in a bowl and set aside. Place the garlic and chilli in the mixing bowl and chop for 10 seconds/speed 5. Scrape down the bowl. Add the oil and cook for 2 minutes/100˚C/ speed 1. Add the tamarind, kecap manis, fish sauce, sugar and coconut milk and cook for 15 minutes/100˚C/speed 1. Blend for 30 seconds/speed 7. MAKES 2 CUPS.
