1 cup (140g) roasted peanuts 2 cloves gar­lic 1 long red chilli, cut into thirds ¼ cup (60ml) veg­etable oil 1 ta­ble­spoon tamarind paste 1 ta­ble­spoon ke­cap ma­nis (sweet soy sauce) 2 tea­spoons fish sauce 1 tea­spoon white (gran­u­lated) sugar 1 cup (250ml) co­conut milk

Place the peanuts in the Ther­momix TM5 mix­ing bowl and chop for 10 sec­onds/speed 5. Place in a bowl and set aside. Place the gar­lic and chilli in the mix­ing bowl and chop for 10 sec­onds/speed 5. Scrape down the bowl. Add the oil and cook for 2 min­utes/100˚C/ speed 1. Add the tamarind, ke­cap ma­nis, fish sauce, sugar and co­conut milk and cook for 15 min­utes/100˚C/speed 1. Blend for 30 sec­onds/speed 7. MAKES 2 CUPS.
