I think a great match for the wallaby tail stew is the Angove Temperanillo Mataro Grenache Graciano ($28).
This is a non-conventional wine for a non-conventional dish.
The dish is delicious and rich with a slightly sticky/gelatinous feel to the sauce. The wine helps cut through this richness of the sauce with bright red fruits and fine tannins.
This is a really exciting food and wine combo!
