Rocket Once es­tab­lished, pick leaves reg­u­larly (above), start­ing with outer leaves. Grow a few plants to avoid over-har­vest­ing and ex­haust­ing one plant. Pinch out flow­ers as they ap­pear to ex­tend har­vest pe­riod, but then al­low plants to set seed, and save seed for fu­ture crops.

Pineap­ple Wait for fruit to de­velop their full colour and emit a sweet aroma be­fore pick­ing. Care­fully cut fruit from stalk with a sharp knife. Es­tab­lished plants will sucker and fruit next year.

Beet­root Har­vest outer leaves from about six weeks old, but main­tain at least five leaves on the plant for con­tin­u­ous healthy growth. Start har­vest­ing baby beet­root when 3–5cm in width. Con­tinue pick­ing up to the size of a ten­nis ball. Larger roots of­ten be­come tough or crack and spoil.
