Rocket Once established, pick leaves regularly (above), starting with outer leaves. Grow a few plants to avoid over-harvesting and exhausting one plant. Pinch out flowers as they appear to extend harvest period, but then allow plants to set seed, and save seed for future crops.
Pineapple Wait for fruit to develop their full colour and emit a sweet aroma before picking. Carefully cut fruit from stalk with a sharp knife. Established plants will sucker and fruit next year.
Beetroot Harvest outer leaves from about six weeks old, but maintain at least five leaves on the plant for continuous healthy growth. Start harvesting baby beetroot when 3–5cm in width. Continue picking up to the size of a tennis ball. Larger roots often become tough or crack and spoil.
