War­ri­gal greens ( Te­trag­o­nia tetragonoides)

This is prob­a­bly our best-known bush food. A tough pros­trate creeper, it is in­dif­fer­ent to soil, sun and sea­son, so it grows over much of Aus­tralia, but the best flavour comes from plants raised in a wa­tered vegie gar­den.

War­ri­gal greens ( pic­tured left and right), some­times called na­tive spinach, can be used in many recipes but should be cooked, due to high ox­alate lev­els in the leaves.
