Native wintercress ( Barbarea australis)
Native wintercress is a nationally recognised rare and endangered endemic species that is left only in pockets along Tasmania’s rivers. This open-leafed brassica is easily grown in vegetable gardens on sandy to heavier soils. It is similar to rocket, with peppery, bright green, spinach-shaped leaves, followed by a spire of edible yellow flowers that rapidly turn to seed. I love it thinly sliced and cooked with grated potato in a pancake, and it’s great in a stir-fry.
