Na­tive win­ter­cress ( Bar­barea aus­tralis)

Na­tive win­ter­cress is a na­tion­ally recog­nised rare and en­dan­gered en­demic species that is left only in pock­ets along Tas­ma­nia’s rivers. This open-leafed bras­sica is eas­ily grown in veg­etable gar­dens on sandy to heav­ier soils. It is sim­i­lar to rocket, with pep­pery, bright green, spinach-shaped leaves, fol­lowed by a spire of ed­i­ble yel­low flow­ers that rapidly turn to seed. I love it thinly sliced and cooked with grated potato in a pan­cake, and it’s great in a stir-fry.
