Pump­kin & wa­ter rib­bon seed curry

This sim­ple, quick veg­etable dish is an ex­cel­lent ac­com­pa­ni­ment to a range of main meals.

250g pump­kin

1 tea­spoon–1 dessert­spoon

curry pow­der salt and na­tive pep­per, to taste 1 dessert­spoon but­ter

½ cup green wa­ter rib­bon seeds

1. Slice pump­kin about 2mm thick and layer in a mi­crowave-proof dish. 2. Sprin­kle with curry pow­der, salt and pep­per, then dot with but­ter.

3. Lightly cover and cook on High in a mi­crowave for 3 min­utes. Mix in the wa­ter rib­bon seeds and cook for a fur­ther 1 minute. Voilà! This recipe makes 4 small por­tions.
