Pumpkin & water ribbon seed curry
This simple, quick vegetable dish is an excellent accompaniment to a range of main meals.
250g pumpkin
1 teaspoon–1 dessertspoon
curry powder salt and native pepper, to taste 1 dessertspoon butter
½ cup green water ribbon seeds
1. Slice pumpkin about 2mm thick and layer in a microwave-proof dish. 2. Sprinkle with curry powder, salt and pepper, then dot with butter.
3. Lightly cover and cook on High in a microwave for 3 minutes. Mix in the water ribbon seeds and cook for a further 1 minute. Voilà! This recipe makes 4 small portions.
