Tasty satay snow peas
Preparation: 10 minutes Cooking: 10 minutes Serves: 4
1 cup snow peas, trimmed 1 cup green beans, trimmed, cut into 5cm lengths 2 cups sliced mushrooms 2 tbsp crunchy peanut paste 1 tbsp chilli sauce 1 tbsp soy sauce
1⁄2 cup coconut milk 3 cloves garlic, crushed
1⁄4 cup crushed peanuts
Steam snow peas and beans until tender crisp. Place in a bowl. In a small saucepan, combine peanut paste, soy sauce, chilli sauce, garlic and coconut milk. Stir until thick. Heat for about 2 minutes. Add crushed peanuts. Mix well. Add snow peas, beans and mushrooms to sauce. Toss well to coat. Serve with Hokkien noodles.
