Tasty sa­tay snow peas

1 cup snow peas, trimmed 1 cup green beans, trimmed, cut into 5cm lengths 2 cups sliced mush­rooms 2 tbsp crunchy peanut paste 1 tbsp chilli sauce 1 tbsp soy sauce

1⁄2 cup co­conut milk 3 cloves gar­lic, crushed

1⁄4 cup crushed peanuts


Steam snow peas and beans un­til ten­der crisp. Place in a bowl. In a small saucepan, com­bine peanut paste, soy sauce, chilli sauce, gar­lic and co­conut milk. Stir un­til thick. Heat for about 2 min­utes. Add crushed peanuts. Mix well. Add snow peas, beans and mush­rooms to sauce. Toss well to coat. Serve with Hokkien noo­dles.
