Nec­tarine, av­o­cado salad

Juice of 1 lemon

1 tsp honey

1 tsp grated gin­ger

White pep­per to taste

1⁄2 gourmet let­tuce, sep­a­rated, rinsed

3 nectarines, cut into thin wedges

1 grape­fruit, peeled, cubed

2 av­o­ca­dos, peeled, de­seeded, diced


Com­bine lemon juice, honey, gin­ger and pep­per in a screw-top jar. Shake well. In a large bowl, com­bine nec­tarine, grape­fruit and av­o­cado and add dress­ing. Mix gen­tly to com­bine. Line a bowl, plate or plat­ter with let­tuce leaves. Ar­range nec­tarine mix­ture onto let­tuce leaves. Serve with pan-fried fish.
