Rocky Road to tri­umph

When it comes to my favourite choco­late, I can’t go past Rocky Road.

I just love it, es­pe­cially sam­pling the var­i­ous va­ri­eties and styles.

In fact, ev­ery­one seems to make it dif­fer­ently.

Some like to put in lots of nuts, oth­ers add plenty of Turk­ish De­light, while the co­conut is im­por­tant to many.

Re­cently, I de­cided to try to make my own af­ter watch­ing a cou­ple of recipe clips on YouTube. How­ever, things didn’t quite go to plan.

In­stead of try­ing to keep it sim­ple, I thought I’d try to be a bit ad­ven­tur­ous.

Some­one had told me they knew some­one who had cre­ated a Rocky Road slice by mak­ing a bis­cuit base for the choco­late.

Sounded sim­ple enough, or so I thought.

Bis­cuit base. Right, I’ll crush some short­bread, mix it with but­ter and spread it on the base of a bak­ing tin.

While that was hap­pen­ing, I melted the choco­late and started to spread the mix­ture across the bot­tom of the tin.

Now, I had jumped the gun be­cause I then re­alised I needed to chill the base for at least a few hours.

And, on top of that, I re­alised I didn’t even make enough bis­cuit base. Not a good start at all. The choco­late had melted now, so I de­cided to mix in the in­gre­di­ents of marsh­mal­lows, nuts and co­conut.

Maybe the bis­cuit base should be added to the mix, I thought.

So, some­what over­taken by the mo­ment, I started to pour the bis­cuit base into the mix­ture. Not such a great idea. Half the mix­ture missed the bowl com­pletely, and now I was con­fronted with mess all over the sink and even on the floor — a po­ten­tial dis­as­ter in the mak­ing.

Should I abort now and throw ev­ery­thing in the bin, and give the ven­ture away?

Were my Rocky Road as­pi­ra­tions at an end?

But when most would have thought all was lost, I some­how found a sec­ond wind.

From some­where, out of the blue, came re­newed in­spi­ra­tion.

In­stead of giv­ing up, I de­cided to push for­ward and con­tinue to fold all the in­gre­di­ents, in­clud­ing the bis­cuit base, through the choco­late.

I emp­tied it into the slice tin and put it into the fridge, hop­ing for the best.

The next day, I opened the fridge in an­tic­i­pa­tion.

And out of the ashes rose the phoenix — Pete’s Rocky Road.

Sim­ply a tri­umph.
