Rocky Road to triumph
When it comes to my favourite chocolate, I can’t go past Rocky Road.
I just love it, especially sampling the various varieties and styles.
In fact, everyone seems to make it differently.
Some like to put in lots of nuts, others add plenty of Turkish Delight, while the coconut is important to many.
Recently, I decided to try to make my own after watching a couple of recipe clips on YouTube. However, things didn’t quite go to plan.
Instead of trying to keep it simple, I thought I’d try to be a bit adventurous.
Someone had told me they knew someone who had created a Rocky Road slice by making a biscuit base for the chocolate.
Sounded simple enough, or so I thought.
Biscuit base. Right, I’ll crush some shortbread, mix it with butter and spread it on the base of a baking tin.
While that was happening, I melted the chocolate and started to spread the mixture across the bottom of the tin.
Now, I had jumped the gun because I then realised I needed to chill the base for at least a few hours.
And, on top of that, I realised I didn’t even make enough biscuit base. Not a good start at all. The chocolate had melted now, so I decided to mix in the ingredients of marshmallows, nuts and coconut.
Maybe the biscuit base should be added to the mix, I thought.
So, somewhat overtaken by the moment, I started to pour the biscuit base into the mixture. Not such a great idea. Half the mixture missed the bowl completely, and now I was confronted with mess all over the sink and even on the floor — a potential disaster in the making.
Should I abort now and throw everything in the bin, and give the venture away?
Were my Rocky Road aspirations at an end?
But when most would have thought all was lost, I somehow found a second wind.
From somewhere, out of the blue, came renewed inspiration.
Instead of giving up, I decided to push forward and continue to fold all the ingredients, including the biscuit base, through the chocolate.
I emptied it into the slice tin and put it into the fridge, hoping for the best.
The next day, I opened the fridge in anticipation.
And out of the ashes rose the phoenix — Pete’s Rocky Road.
Simply a triumph.
