1 medium cauliflower

(650g), grated ½ cup grated tasty cheese ¼ cup grated parme­san 1 egg ¼ cup tomato pas­sata 1 chorizo, thinly sliced 1 small red onion, finely

sliced ¼ cup char­grilled

cap­sicum strips 100g baby bocconcini,

drained basil leaves, to serve

1. Pre­heat oven to hot, 200°C. Line a large pizza tray with bak­ing pa­per. 2. Place the cauliflower in a mi­crowave-safe bowl. Cover with plas­tic wrap and mi­crowave on high (100%) power for 8-10 min­utes un­til very ten­der. Drain well in

a fine sieve and squeeze out any ex­cess mois­ture. 3. Trans­fer cauliflower to a bowl with cheeses and egg. Sea­son to taste and mix well. Press mix­ture firmly out over tray to make an even 1cm-thick round. Bake for 15-20 min­utes un­til lightly golden. 4. Spread pas­sata over base. Top with chorizo, onion, cap­sicum and bocconcini. 5. Bake for a fur­ther 8-10 min­utes un­til the cheese melts. Serve topped with basil leaves. SERVES 4
